KAMPUA!! If you have not tried Kampua, you really have not been to Sibu. Kampua is such a dish that is the embodiment of Sibu. Mix the cooked Kampua noodles with lard, salt, seasoning, dark or light soy sauce, chili sauce, fried onions, green onions, and add on some sliced Char Siu (Roast Pork), there you go for a scrumptious meal; a meal that symbolizes Foochow (Fuzhou Dialect) in Sibu. Kampua has developed different flavors in addition to the usual kampua with chili and dark soy sauce, kampua with garlic, kampua with curry, kampua with red wine paste stewed meat or braised meat. The famous innovation is stir-fried kampua which comes with a variety of add-on ingredients.
